“How do you keep your cookies from spreading out when they bake?” I hear this question at almost every cookie class!

Here are my best tips:
1. Make sure your butter is cold enough. I take mine out of the fridge about 30-40 minutes before I’m going to bake, cut it in chunks and place in my mixing bowl with all the sugar to soften a bit faster. If butter gets too soft, your dough will be too soft.
2. Use enough flour. Your dough should pull away from the edge of the bowl/paddles cleanly. It shouldn’t be sticky. If it’s too sticky, add more flour (1/4c at a time) and remix.
3. Place your cut out shapes closer together on your baking tray - the more evenly they’re spaced, the more evenly they bake. I don’t know the exact science behind this tip…but it helps. Something about air flow I’m sure 🤪.

The BEST day with my nephew Sam before he heads to the Culinary Arts Academy in Switzerland. We patisserie-d our way around town at @dianesplacemn where I had the single greatest croissant of my life and an incredible brunch. Then to St. Paul to see @marcheuparis and grab a few gorgeous desserts to enjoy back home. Next up, Scheels because the Hawaiian badly needed a winter coat before heading to the Alps. Finally, belted the Wicked soundtrack together in the car and completely mortified my children. It was the perfect day.

Gonna live vicariously through Sam for the next few years and can’t wait to see all that he learns and experiences. Good luck Slammer, this whole cringy post is just so you know how much I adore you. 🥰
